A stroll through the fields near their small town was taken by Maria and her daughter Sofia on a sunny summer day. Maria noticed a small tree as they were moving along. She took a closer look and discovered the tree was producing tiny, white fruits that she had never seen before.
At first glance, Maria mistook the fruits for animal or bird eggs, but upon closer inspection, she discovered they were eggplants. Sofia pleaded with her mother to bring some of the strange white fruits home so she could prepare them.
Maria was initially hesitant because she had never prepared white eggplants before and wasn’t sure what to do with them. Maria gave it a try because Sofia insisted that she do. A few of the eggplants were removed by her and taken home.
Maria started cooking as soon as they got home. To make sure the eggplants were cooked just right, she looked up recipes online. The dish she had always loved, eggplant parmesan, was finally made by her.
Thinly sliced, then deep-fried until golden brown, the eggplants were then topped with tomato sauce and mozzarella cheese and heated through in the oven. She and Sofia finished their creation, then they sat down to enjoy it.
Maria was delighted to discover how delicious the eggplant parmesan was. The tangy tomato sauce, gooey cheese, and soft, sweet, and delicately flavored eggplants worked well together.
Maria decided to visit the farm again every summer after that to see how the white eggplant tree was doing. It would produce its odd but delicious fruit each summer. They had developed a family recipe for eggplant parmesan, so she would choose a few eggplants from the tree and bring them inside.
The discovery of the white eggplant tree opened up a whole new world of culinary possibilities for Maria and Sofia. Maria was also reminded by it of the adage that sometimes the best things can be discovered in the most unlikely places.
